Happy New Year! 2014's Top Ten!


Okay, well, I'm only slightly behind.
I mean, January's not quite half over yet, right?

It has been super crazy nuts around here the last few weeks.
So, without further ado,
allow me to present to you the top 10 from 2014!!!

I know, I know...
you're thinking...didn't I only post ten times last year?
No...I actually did a few more than that!

As always, I feel these numbers would be totally
different if posted at different times of the year.

I just changed jobs and have much less free time now...

I am hoping to get it out to you in time for Valentine's day.

Crustless Cheesy Egg and Sausage Bake

Super easy, nice & cheesy...
glad that doesn't describe me!
Hee hee.

But seriously...
I've had this recipe in my binder for ages...
we use it all the time!

I cook once, we eat breakfast for days!
What's easier than that?



And it's loaded with good stuff, Maynard!

Sausage and mushrooms...


bright green onions...


blurry, sweet, red tomatoes...


wholesome, fresh eggs...


lovingly blended with some creamy cream and spices!


layer it all up...with some of that cheesy cheese...


and pour some eggs on me...
or rather on my breakfast!!!


give it a little shake...the pan, not your booty...
unless you really wanna...


bake to golden perfection...


slice it up...and chow it down!


We cut this into eight equal pieces.
That's 1 1/2 eggs per serving plus sausage, cheese, and veggies.

Since there are only two of us, we have
a ready made breakfast for four days!

My husband loves that plan...
since he's usually the breakfast-maker. :)

And since he IS the breakfast-maker...
this makes it super simple for me when he's out of town for work...
I just toss a piece in the microwave and I'm not trying to
find time to pull breakfast together before work!
Awesomesauce!


This also works great for a brunch buffet...
and since it's totally delicious...it's always a big hit!
I would just cut it into 12 pieces, I think.

Crustless Cheesy Egg and Sausage Bake
  • 1 lb breakfast sausage, browned and crumbled
  • 1 cup chopped mushrooms
  • 1/2 cup sliced green onions
  • 1 large tomato, diced - or the equivalent in yummy cherry tomatoes, quartered
  • 8 oz shredded cheese, I love sharp cheddar, but use what YOU love
  • 12 eggs
  • 1 cup heavy cream  (I actually use 1/2 cup cream and 1/2 cup half & half   -   does that make it 3/4 & 1/4?)
  • 1/2 tsp Italian herb seasoning
  • 1/2 tsp salt
  • ground pepper to your liking
  • sometimes when I'm feeling adventurous, I add a sprinkle of crushed red pepper!

  1. Cook sausage and crumble, when almost done, stir in chopped mushrooms so they can cook for a couple minutes.  Spread it all into a well greased or "Pammed" 13 X 9 baking pan.
  2. Evenly sprinkle the green onions, then the tomatoes, then the cheese over the meat.
  3. Crack your eggs into a mixing bowl, beat with a fork.  Add in cream and seasonings.  Beat with fork until well combined.
  4. Pour egg mixture evenly over layers.
  5. Bake at 350° for 35 minutes...or until set...it begins to get golden around the edges.
  6. If serving right away, allow to sit for 10 minutes or so...otherwise, set on a rack until cool, cut into desired pieces, cover with aluminum foil and place in fridge.
  7. Warm it slowly in the microwave and enjoy!

This is low carb and since it doesn't have a crust...technically gluten free!
It's totally yummy and good for Atkins...
Easy and convenient on busy mornings.
What's not to love?
C'mon...give it a try!

In other news...
I have actually started on that bathroom makeover
that I bought the paint for a year while ago.

The bad news? 
I'm not sure I'm still lovin' the paint choice I made.
Oops.

Forget the Breadcrumbs Baked Meatballs


I mentioned once that we were trying to cut
carbs here in my patch of moonlight.

Shhhh...don't bring up this post, or this post, or especially this post.
I love to bake...don't judge. :)
  
Those are occasional indulgences.  As far as you know.

For the most part...we cut back on breads, pastas and such.
We usually don't have a starchy side with dinner.
Protein and veggies.
That's us.



This was something I came up with to change things up a little.
These meatballs are SOOOOO good...you might sing a little hallelujah song.
Okay...maybe that was just me.
Whatever.

Did you know that it's not necessary to load up your
meatballs {or even meatloaf} with breadcrumbs or crackers?

Nosirree, Bob.

I didn't even use egg.
Funny thing meat...it kinda cooks together like that.

Dump all your ingredients in a big bowl...like so:



Now might be a good time to remove any jewelry up to your elbows.


Now...mush it all up together making sure to get all
the seasonings and different meats well blended.

Now, I used a muffin scoop to shape them so I
knew they would all be about the same size.



Round them out some and put 'em in a baking dish.
Give 'em room to breathe a little.



Bake in a preheated 350° oven for about 30 minutes.



Let's Eat:

 Forget the Breadcrumbs Baked Meatballs
  • 1 lb. ground turkey
  • 1 lb. ground pork
  • 1 lb. bulk Italian sausage {I used mild}
  • 1/2 cup {or more} grated Parmesan cheese
  • 1/2 tsp salt
  • pepper to taste {about 1/2 tsp for me}
  • 1/2 - 3/4 tsp paprika
  • 2 tbsp crushed fresh garlic
  • 1 tsp dried minced onion
  •  1/4 - 1/2 tsp crushed red pepper
Mix all ingredients really well.  Form into 2-3" balls.
Place in an oven safe baking dish...NOT touching.
Bake at 350° for about 30 minutes.

Eat them straight out of the pan.
Or you could be more civilized and put them on a plate.
Toss them in spaghetti.
Just be careful of the pepper...if somebody sneezes...
your poor meatball...could roll out the door.
